Anzac biscuits received their name during the First World War. Up until that time people had been baking "Soldier's biscuits" for the troops, based on a recipe derived from the Scottish oat cake. The main feature was that no eggs were used otherwise the biscuits would spoil on the long journey to the front - see http://www.aussieslang.com/features/anzac-biscuits.asp.
These were renamed as Anzac biscuits after the campaign at Gallipoli.
ANZAC = Australian New Zealand Army Corp. These biscuits are yummy,
very easy to make and popular. Although they don't contain Ginger, the
oatmeal reminds me of these biscuits.

This recipe has a 5% SF level
The 30gm of honey had previously been dissolved in 250gm water
(deducted from the 557gm above) a few days earlier as per Marina's
instructions for Honey Water, I added the Honey powder mainly because
I have lots and wanted to use it up. The Ginger EO was a tester 48gm
was all I had, it was the first time I had used it in soap. Sorry I
did not record how much ground oatmeal I added, but let's just say 1/3
cup. Honey water was mixed with Lye. Honey powder was dissolved in a
little extra water and added at trace with oatmeal and EO
